My Super Quick Tasty Pasta Bake Recipe

When we need a really quick filling dinner or supper I make my pasta bake specials! I love pasta bakes because you can throw any thing you have in the fridge or cupboard into them. They are tasty and filling. For this pasta bake I used: 1 can of sweetcorn, 1 red pepper, 1 yellow chilli, 1 ring of chorizo, 2 cups of penne pasta with lots of Parmesan cheese.
 
 
Start by draining 1 can of sweetcorn and chopping 1 red pepper and put into an oven dish
Boil the 2 cups of penne pasta in water until cooked
 Chopping 1 chilli finely and mix with the sweetcorn and peppers

 Grated some Parmesan cheese into a bowl
Lightly fry some chorizo in a pan
 Mix the chorizo with sweetcorn, red pepper, and chilli and pasta
 Cover with Parmesan
 Heat in oven for 10/15 minutes
And enjoy!

Our Roast Chicken Recipe Help From Nigella & Gordon!

This is our recipe for a lovely roast chicken with a twist. Roast chicken with lovely roast leeks and mixed peppers. I saw the original recipe on Nigella Lawson's new show you can have a look at allot of her recipes here at
http://www.nigella.com/ we made a twist using some things from a Gordon Ramsay recipe which you can find here http://gordonramsaysrecipes.com/ So here is The Furey Follies take on a Nigella & Gordan roast chicken.



Ingredients you will need for this are: A good quality chicken we use a small chicken as there where only the two of us for dinner! Two mixed pepper any colour but we like yellow and red peppers, six cloves of garlic, chorizo, two large leeks, olive oil, salt and pepper. 
 Chop up the peppers & leeks put most in a large roasting tray with the chicken but keep some in a little bowl to stuff the chicken later.
Fry chorizo in pan for five minutes 
 Now stuff the chicken with the left over leeks,chorizo & peppers. 
Put the chorizo juice/oil over the chicken and put the rest of the chorizo in with the leeks and peppers with 3 cloves of garlic. Put in oven for an hour and 15 minutes at Gas mark 5 or 180c.

Mammy Furey's Roast Pork Recipe

Here is my Mammy in-law lovely recipe for roast pork. To be honest pork was never my favourite roast as I always found it quite chewy and dry. One Sunday lunch in my lovely in-laws changed all this the pork was melt in your mouth with amazing crackling it was delicious. So of course I asked my Mammy In-law for the recipe I made a few little changes so here is Mammy In-law and daughter in-law Furey recipe for amazing slow cooked tender pork with the best cracking ever!!
 
 
First get you ingredients ready..


1 Large onion (or two medium onions), butter, dried parsley, dried mixed herbs, salt & pepper and minced garlic you can of course use fresh garlic but I just find it handier to use a jar of minced garlic


A nice good quality piece of pork make sure there is a nice bit of fat on it for the crackling


Quarter a onion.


Sit the piece of pork on the onions


Make a paste with butter, parsley, mixed herbs, salt, pepper and garlic and spread it into the pork


Make sure the pork is covered with the paste then, place in a over tin cover with tin foil and put in the oven for 2hours at gas mark 5/6 or 150c.

At the half way point take the pork out and baste in the juices it should look something like this
yummy!!

After two hours take the tin foil off take and put back in the oven for 40 mins for yummy crackling


Ready for carving the onions should be soft now I now take these and chop them up and put them into the gravy for a lovely rich onion gravy


The finish result served with onion gravy, roast potatoes, leeks and a nice glass of red wine.
