Our Roast Chicken Recipe Help From Nigella & Gordon!

This is our recipe for a lovely roast chicken with a twist. Roast chicken with lovely roast leeks and mixed peppers. I saw the original recipe on Nigella Lawson's new show you can have a look at allot of her recipes here at
http://www.nigella.com/ we made a twist using some things from a Gordon Ramsay recipe which you can find here http://gordonramsaysrecipes.com/ So here is The Furey Follies take on a Nigella & Gordan roast chicken.



Ingredients you will need for this are: A good quality chicken we use a small chicken as there where only the two of us for dinner! Two mixed pepper any colour but we like yellow and red peppers, six cloves of garlic, chorizo, two large leeks, olive oil, salt and pepper. 
 Chop up the peppers & leeks put most in a large roasting tray with the chicken but keep some in a little bowl to stuff the chicken later.
Fry chorizo in pan for five minutes 
 Now stuff the chicken with the left over leeks,chorizo & peppers. 
Put the chorizo juice/oil over the chicken and put the rest of the chorizo in with the leeks and peppers with 3 cloves of garlic. Put in oven for an hour and 15 minutes at Gas mark 5 or 180c.

Love / Hate!


 Hate
 

* Timing a bus and it never coming - standing around a an hour on a bus that was meant to come 45 minutes ago. It really really annoys me!
 
* People who do nothing in work - while other people do everything...this really gets on my nerves and it happening allot at the moment.
 
* When people push past you at the bus stop when getting on the bus - this happened to me the other day I was the first person at the bus stop and yet the last person to get on the bus!
 
* When you feel rich when you get paid - but by the end of pay day your broke again!
 
* People with no manners - it costs nothing to be nice.

* Having a nice bubble bath after a long day - I love this light a few candle, put some soft music on, run a bubble bath and relax!
 
* I am cooking and baking allot more - due to inspiration from Nigella Lawson and The Great British Bake off!
 
* Curling up on the sofa with the hubby after a long day!
 
* Maggie Smith In Downtown Abbey - Her lines are just pure magic!
 
* Sarah Brightman's new song Angel - It means so much to me already reminds me of my brother.
 
* Pukka Tea - I have just discovered this tea due to a lovely lady in work and I love it. Can't to discover all the different flavors.

The Glad Game

Watching Bake off with a glass of red!

 Things I Am Glad For:
- That the Great British Bake off has inspired me to start baking.

- That Autumn is here and I finally know what to wear again.

- That we have our own place

- That my hospital appointment is getting nearer

- That I have my little part time job

- That I have money to go on little shopping sprees

- That I have a wonderful man who loves me for who I am

Mammy Furey's Roast Pork Recipe

Here is my Mammy in-law lovely recipe for roast pork. To be honest pork was never my favourite roast as I always found it quite chewy and dry. One Sunday lunch in my lovely in-laws changed all this the pork was melt in your mouth with amazing crackling it was delicious. So of course I asked my Mammy In-law for the recipe I made a few little changes so here is Mammy In-law and daughter in-law Furey recipe for amazing slow cooked tender pork with the best cracking ever!!
 
 
First get you ingredients ready..


1 Large onion (or two medium onions), butter, dried parsley, dried mixed herbs, salt & pepper and minced garlic you can of course use fresh garlic but I just find it handier to use a jar of minced garlic


A nice good quality piece of pork make sure there is a nice bit of fat on it for the crackling


Quarter a onion.


Sit the piece of pork on the onions


Make a paste with butter, parsley, mixed herbs, salt, pepper and garlic and spread it into the pork


Make sure the pork is covered with the paste then, place in a over tin cover with tin foil and put in the oven for 2hours at gas mark 5/6 or 150c.

At the half way point take the pork out and baste in the juices it should look something like this
yummy!!

After two hours take the tin foil off take and put back in the oven for 40 mins for yummy crackling


Ready for carving the onions should be soft now I now take these and chop them up and put them into the gravy for a lovely rich onion gravy


The finish result served with onion gravy, roast potatoes, leeks and a nice glass of red wine.

Remembering My Brother Patrick.....



Its my brother Patrick's six year anniversary on 2nd October here is a poem I wrote a few years about my brother Patrick.

Sometimes late at night,
When I just can't sleep
Into your room I creep
Wishing that you will be there 
But I know its not in your bed you sleep
I sit on your bed
Wishing I knew what had gone on in your head
I close my eyes and see your face
We will meet again another time and place

Remembering the fun times we shared
I hope you knew how much I cared
You were a clown when I was down
The bestest friend to have around
I never got to say goodbye
And that's the thing that makes me cry
You were the greatest friend I ever had
To be your sister makes me so glad

As I look around your room
Memories come flooding back to me
Of the young and happy children we used to be
Even though we are apart you will be forever in my heart
Because my little brother you meant the world to me



 Six years later I still miss him ever day. I think of what he would be doing now, would he be married or have children or living abroad somewhere. I miss his smile, his jokes, our little talks, watching TV together, going out with friends together, and I miss they way he knew me and knew how to get me out of a bad mood or calm me down if I was getting stressed out. I miss how Paul, me and Patrick would take on the world together. I miss our friendship I miss my little brother. 


This song is how I feel at the moment Angel by Sarah Brightman. That's what I think Patrick is for his family and friends he is our angel. Sometimes I get the feeling he is with me when I need strength for something I feel he is with me. I miss him still so much but I know he is with me and I have the most wonderful memories of him.

RIP my wonderful brother Patrick....

Her Hands

Her hands held me gently from the day I took my first breath.
Her hands helped to guide me as I took my first step.
Her hands held me close when the tears would start to fall.
Her hands were quick to show me that she would take care of it all.

Her hands were there to brush my hair, or straighten a wayward bow.
Her hands were often there to comfort the hurts that didn't always show.
Her hands helped hold the stars in place, and encouraged me to reach.
Her hands would clap and cheer and praise when I captured them at length.

Her hands would also push me, though not down or in harms way.
Her hands would punctuate the words, just do what I say.
Her hands sometimes had to discipline, to help bend this young tree.
Her hands would shape and mold me into all she knew I could be.

Her hands are now twisting with age and years of work,
Her hand now needs my gentle touch to rub away the hurt.
Her hands are more beautiful than anything can be.
Her hands are the reason I am me.
